Phulka is a traditional flatbread that's very similar to a chapati. Although both flatbreads are made from wheat flour. Regarding the cooking method, phulka is first cooked on a tawa on one side, while the other side is placed over direct heat such as embers, resulting in it puffed up, ballooney appearance because of the trapped steam between the layers of dough.
Luchi is always more than a flat bread recipe in Bengali culinary and culture. Whether it’s a weekend special breakfast or occasion and even festive celebration, starting from “Durga puja” to “Pohela Baishakh”, recipe for Bengali Luchi is always there as evidence of the joy. It is one of the most popular and beloved mini breads which are frequently prepared in almost every Bengali house.
Growing up in our Bengali family, Maida Triangle Paratha was one of those famous dish, yet special treats often made for weekend breakfasts and festive meals. In our childhood, the most common Sunday breakfast (Robibar er Jolkhabar) was Bengali Triangular Maida Paratha with Aloor Dum or Aloo o Begun Bhaja.
Koraishuti means green peas and Koraishutir Kochuri is not just a food, it is an emotion for all Bengali's. According to me, winter is incomplete without 'green peas'. Am I right?? We bong love to eat 'koraishutir kochuri' during winter. In my home nobody brings this kochuri from shops. My mom always makes this at home with 'aloo dom' and 'payesh' and everybody loves it. Nowadays we don't need to wait till winter for green peas because now almost everywhere frozen peas are available. This kochuri goes very well with 'dum aloo'.
Aloo paratha, or potato-stuffed paratha, is a popular North Indian breakfast recipe where flatbread is stuffed with a spicy potato filling and then roasted on a hot tawa or griddle. This aalu ka paratha is our family favourite, which is a slight spin-off from the classic Punjabi aloo paratha. It is filling, wholesome, and an absolute comfort food, often served as breakfast with aloo paratha, curd and pickle.

Whenever I talk about Sada Aloo Chorchori, it always makes me feel nostalgic. As a bong, I have grown up eating this delicacy and have never got bored with it. I still remember how my mother used to prepare Bengali sada aloo kalo jeerechorchori (torkari) frequently on Sundays or during puja days along with a big batch of fulko luchi for breakfast. Even sometimes she used to serve it with Maida Triangle Paratha as well. We always used to devour that with immense pleasure. Sada Aloo Kalo Jeere Torkari with Fulko Luchi is a staple breakfast for bongs on Weekends.
